Chicken Skinny Noodle Soup

Chicken Skinny Noodle Soup

Ingredients

  • 1 pack Skinny Noodles - Well rinsed and cut into small pieces
  • 400 gramsof skinless chicken breast - cut into small bite size pieces
  • 1 litre fat free Chicken stock
  • 1 litre water
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Chicken powder (make sure there is no sugar in it)
  • ½-1 teaspoon soy
  • ¾ teaspoon celery salt
  • Spring onions for garnish
  • Optional - 1 Bay leaf
  • Optional - ½ cup chopped parsley

Method

  • Place stock, water garlic, onion, chicken powder, celery salt and bay leaf in large saucepan and bring it to boil.
  • Add the chicken, parsley and prepared noodles.
  • Simmer for 5-8 minutes or until the chicken is cooked.
    Be careful not to over-cook the chicken.
  • You can substitute chicken for beef and beef stock or fish/prawns and fish stock.

Serves 4
